“And in the morning, I am making waffles!”

Breakfast is my favorite meal to create. Some of my best cooking memories come from making everyone in the house some form of scrambled eggs. I took so much pride in my very picky mom requesting my cuisine!
Growing up I was not able to cook at all because my mom hated messes. She didn’t cook much either. My dad cooked but I can’t honestly picture him in our kitchen as a kid. I remember seeing my grandmother in her kitchen. When I got to high school, I started culinary arts and BAM, it was love at first sight.
In high school, my grandmother got me a Weight Watchers membership before my quinceanera, sweet 15s party. While I do not recommend this for a 14-year-old, high school freshman, it did allow my mom to let me cook. I started making my meals. It was fun thinking about to what cook. I also saw what into my food. I was also able to cook some for my mom!
Back to these waffles!
I have always loved eggs as a part of the breakfast food group. Since my egg allergy, it has been hard giving up eggs. Eggs bind so well. I am thankful for social media and others following an Autoimmune Protocol diet. Since eggs are known to cause inflammation, you need to remove them from your diet for roughly 6 months to see if they affect you.
In a society where breakfast is heavily revolved around eggs, there are ways to work around this!
Bananas and apple sauce are an amazing way to hold the flower together. That is what I used in my waffles.

Ingredients:
- 1 cup of almond flower
- 1/2 banana
- 1/4 cup of applesauce
- Cinnamon
- Walnuts (optional)
What to do:
- Mash banana in a bowl- I try to make it a thin constancy.
- Add the applesauce to banana purée
- Then add the flower and mix throughly
- I add cinnamon at this step too
- If you want you can add your extras, I add chopped walnuts.
For this next step, you can make pancakes in a frying pan or use a waffle maker. * I have this mini waffle maker that I love it’s Dash brand and I linked it for y’all!
I can eat them plain, with almond butter, or maple syrup! I would love to hear how you like them.
