This TikTok meal has been very popular! I remember being in Trader Joe’s and the staff talking about they were not able to keep these ingredients on the shelf!

I will start this off by saying: I AM A HUG MAC N’ CHESSE FAN!!!! This is my food weakness. I crave Mac N’ Cheese more than I care to admit. Lol
When I saw this trend take over instagram I knew I had to adapt it and make it compliant for my lifestyle.
Cheese has never been good to me! I always get stomach aches when I eat dairy. There just hasn’t been around that for me. I have tried all these vegan cheese and I just do not like them! I have found out that consuming goat cheese doesn’t cause the same reaction as cow’s milk! I do eat goat cheese sparingly!
Since I don’t eat dairy or gluten I had to make some changes to it.
Things needed:
⁃ box of cherry tomatoes
⁃ cheese ( I used a goat cheese log from Trader Joe’s)
⁃ Olive oil
⁃ Pasta ( I used @jovial – I am beyond obsessed with their cassava pasta)
What to do:
⁃ Clean tomatoes
⁃ Add in a oven safe dish
⁃ Add some olive oil ( just a little bit)
⁃ Place the cheese in the center with tomato’s all around
⁃ Place in oven ( I did 350 for 12 min)
– I looked for the cheese to have a golden color
⁃ cook pasta while cheese and tomatoes are baking
⁃ Then add pasta to cheese and tomatoes and mix!
