Burrito Bowl

Who doesn’t love a good burrito bowl?!

I love how easy, tasty, filling, and he different options you have can! They honestly hit all the boxes for me!

Cauliflower is a huge staple in my house! I love it in just about anything. So when I can use it as rice, I do!

White rice is a weakness of mine. Growing in a Cuban house hold, rice is a staple. It is such a comfort to me but it causing me pain. It causes joint pains and swelling. I do sometimes eat it when my stomach is a mess. I also can eat way more rice in one sitting than anyone should! I have a hard time saying no, and just rather not have it around!

This yummy bowl is made with cauliflower rice, chicken, sautéed onions and peppers, lettuce, tomatoes, and last but not least guacamole!

Ingredients:

– 1 chicken breast

– Olive oil

-cauliflower rice- I buy the Trader Joe’s brand or you can grind up cauliflower and make your own

-onions

-peppers

-lettuce

-tomatoes

-avacado

-Siete hot sauce

What to do:

-I started off by putting the chicken in the InstantPot for 35 min with water. When it is done, it just shreds apart

– I then put the shredded chicken in a frying pan with some olive oil

– add the onions and peppers until everything gets nice and coated in olive oil

– I then add the hot sauce into the frying pan, I also add some red pepper flakes ( I like it hot!!!)

– In another frying pan I add the cauliflower rice

– Add some olive oil and sauté it just a bit

-I had pre-packaged guacamole cups that I get from Costco

– Cut up lettuce and tomatoes

-Add it all to the bowl
